Simple Baby Carrots

Ingredients

  • 8-12 baby carrots
  • splash of chicken stock
  • 1 tbspn butter

This is a tasty, simple side, perfect when Ontario carrots are in season. Try to get different colours if you can.

Preparation

  1. Blanch the carrots in boiling salted water for 4-5 minutes until just tender when pierced. (If you have different colours, blanch them separately, starting with the lightest colour).
  2. Remove the carrots from the boiling water and immerse in a batch of iced water. Allow carrots to cool and then drain.
  3. When ready to serve, heat in a pan with the butter and stock. Serve.
